Ingredients

  • 2 tsp loose black tea (or 2 black tea bags)
  • 1 cup hot water for brewing
  • 3 tbsp brown sugar syrup (plus extra for streaking the cup)
  • 3/4 cup whole milk (or non-dairy milk)
  • 1/2 cup cooked tapioca pearls
  • Ice

Preparation

  1. 1Bring a pot of water to a rolling boil (about 10 cups of water per 1 cup of tapioca pearls).
  2. 2Add the tapioca pearls and stir gently so they don't stick together.
  3. 3Boil for 20–25 minutes until the pearls are soft and chewy all the way through, then turn off the heat, cover, and rest for 10 minutes.
  4. 4Drain, rinse with cool water, and soak the pearls in brown sugar syrup or honey for 10 minutes so they stay sweet and glossy.
  5. 5Drizzle brown sugar syrup around the inside of the cup so it runs down in streaks.
  6. 6Brew the tea double-strength and let it cool slightly — a strong base keeps the drink flavorful once the ice goes in.
  7. 7Add the cooked tapioca pearls to the bottom of a 24 oz cup (skip for a no-tapioca drink).
